Healthy Carrot Cake Recipe


  • 3 eggs
  • 1-2 bananas
  • 10-15 dates without seeds
  • 6 tablespoon sunflower oil
  • 1 cup whole wheat flour
  • 1 ½ teaspoon baking powder
  • 3 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cardamom
  • 3-4 medium carrots( grated)
  • ½ cup coconut flakes
  • 1-2 walnuts( diced)
  • ½ cup raisins


  • 200 g cream cheese
  • 3 tablespoon honey
  • ½ lime juice.
  • ½ cup hazelnut


  • Preheat oven at 350 degrees F. and beat eggs in a bowl. Blend bananas, dates, and oil in cream in a different container. Put flour, baking powder, cinnamon, nutmeg, and cardamom and combine with egg and banana cream. Put grated carrots, coconut flakes, walnuts, and raisins and mix.
  • Transfer into the cake tin and bake for 40 minutes. Insert a toothpick in the middle of the cake, and once it comes clean. It means the cake is ready and let it cool.
  • Beat together the cream cheese and honey. Put Frosting once the cake is completely cooled. Top it with diced hazelnuts and walnuts.

  • Cooking spray
  • ¾ grounded sugar
  • 3 big eggs
  • 2 tbsp cornstarch
  • 3 tbsp cocoa (unsweetened)
  • 2tbsp orange juice
  • 1 tbsp triple sec (orange-flavored liqueur)
  • 1 tbsp hot water
  • Dash of salt
  • 2 ounces bittersweet chocolate (cut)
  • Grounded sugar (optional)
  • Orange rind strips


  • Preheat oven at 350 degrees.
  • Grease pan with cooking spray, place parchment paper. Cover outside of pan with aluminum foil.
  • Beat ¾ sugar and eggs on high speed for 7 minutes.
  • Mix cornstarch and cocoa and keep it aside. Put juice, liqueur, water, salt and chocolate in a small bowl, preferably a glass bowl. Microwave till it melts. Mix every 20 seconds till smooth. Put cornstarch mixture and mix till smooth.
  •  Softly put ¼ of egg mixture in chocolate mixture and gently fold the remaining dough. Put batter in the prepared pan. Keep the pan in 13×9 inch baking pan; pour hot water to the larger container for about 1 inch. Bake for 20 minutes till it is set from the top. Take out the cake pan from water and let it cool for 5 minutes on rack. Take out the cake from sides with a spatula. Let it cool at room temperature. Let it chill overnight. Put grounded sugar and rind before serving.
