Recipe 1 For Tart Crust

Ingredients:

1 cup all-purpose flour

1/2 cup unsalted butter, cold and cut into cubes

1/4 cup sugar

1 large egg, beaten

1 teaspoon vanilla extract

Instructions:

1. In a medium bowl, whisk together the flour, sugar, and salt. Add the butter and, using a pastry blender or your fingers, work it into the dry ingredients until it resembles coarse crumbs.

2. Add the egg and vanilla and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 1 hour (or up to 2 days).

3. When you’re ready to use the dough, remove it from the refrigerator and let it sit at room temperature for 10 minutes to soften slightly. Roll out the dough on a lightly floured surface to a 12-inch round. Transfer the dough to a 9-inch tart pan and press it into the bottom and up the sides. Trim any excess dough from the edges.

4. Preheat the oven to 375°F.

5. Line the crust with parchment paper or foil and fill it with dried beans or pie weights. Bake for 10 minutes, then remove the paper and weights and bake for 5 to 7 minutes longer, until the crust is golden brown.

6. Cool the crust on a wire rack before filling it with your desired filling.

Recipe 2 For Tart Crust

Ingredients:

1 cup all-purpose flour

1/4 cup sugar

1 large egg, beaten

1 teaspoon lemon juice

Instructions:

1. Preheat the oven to 375 degrees F (190 degrees C). Butter and flour a 9-inch pie dish.

2. In a medium bowl, combine flour, sugar, and salt. Cut in butter until it resembles coarse crumbs. Stir in water 1 tablespoon at a time until dough forms a ball. Press into the bottom and up the sides of the prepared pie dish.

3. Bake for 10 minutes. Remove from the oven and let cool on a wire rack while you prepare the filling.

4. In a large bowl, whisk together eggs, sugar, cornstarch, lemon juice, and zest. Pour into the cooled crust.

5. Bake for 20 minutes, or until filling is set. Let cool on a wire rack before serving.

Recipe 3 For Tart Crust

Ingredients:

1/2 cup unsalted butter

1/4 cup sugar

1 large egg, beaten

1 teaspoon lemon juice

Instructions:

1. Preheat the oven to 375 degrees F (190 degrees C). Butter the bottom and sides of a 9-inch pie pan with a little bit of melted butter.

2. In a medium bowl, stir together the graham cracker crumbs, sugar, and remaining melted butter until well blended. Press the mixture evenly into the bottom and up the sides of the prepared pan.

3. Bake for 8 minutes. Remove from the oven and let cool while preparing to fill.

4. In a large bowl, whisk together eggs, sugar, cornstarch, salt, and lemon juice until well blended. Stir in zest. Pour over the crust.

5. Bake for 20 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking for an additional 20 minutes, or until filling is set.

6. Let cool before serving. Serve with whipped cream, if desired.

Recipe 4 For Tart Crust

Ingredients:

1 cup all-purpose flour

1/4 cup sugar

1 large egg, beaten

1 teaspoon vanilla extract

Instructions:

1. Preheat the oven to 375 degrees F (190 degrees C). Butter or spray a 9×13 inch baking pan.

2. In a medium bowl, combine flour, sugar, salt, and baking powder. Cut in butter until it resembles coarse crumbs. Stir in eggs and vanilla extract until dough forms. Press two-thirds of the dough evenly into the bottom of the prepared pan. Reserve remaining dough for topping.

3. Bake the crust for 10 minutes. Meanwhile, in a small saucepan, heat preserves over low heat until melted.

4. Remove crust from oven and spread with preserves. Sprinkle with almonds, if desired. Crumble the remaining dough over the top.

5. Bake for an additional 20 minutes, or until the topping is golden brown. Cool before serving.
