Healthy muffins recipe is a classic dish that comes with a small twist. Instead of using fruit’s, we have used other ingredients. The fruit free healthy muffin recipe comes with ingredients like oat bran and flax seeds.
As you know, oats are very good for health. They are nutritious and come with loads of fiber in them. Flax seeds are good for health. Apart from we have used some healthy ingredients like soymilk, wheat pastry flour, and brown sugar that are incredibly light on the stomach.
In case you did not know, brown sugar is healthier than white sugar. We have also made use of some carrots that are peeled and shredded along with the cinnamon for flavor.
To prepare the fruit free healthy muffin recipe, you will need a working oven or microwave. It would be better to use a branded oven for baking the muffins. Apart from that, you will need muffin cups or a muffin tray that usually comes along with the oven, and a cooling rack.
It depends on your preference. You can either use the muffin cups or muffin tray. You will also need two mixing bowls, preferably medium-sized. Other tools would be mixing spoons. Wooden spoons in large-size would be ideal and an electric whisk for mixing.

- 1 cup of all-purpose of unbleached flour
- 1/2 cup of flax seeds
- 1 cup of wheat pastry flour
- 1 cup of soymilk
- 2 cups of peeled and shredded carrots
- 2 tsp of baking soda
- 1 tsp of brown sugar
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp salt
Method For Preparing Fruit Free Muffins
To prepare the fruit free healthy muffin recipe, you need to make use of a large or medium-size bowl. Add all the ingredients into it. The oat bran, brown sugar, baking soda, salt, cinnamon, unbleached flour, baking powder, flax seeds, and wheat pastry flour.
You will need to mix them using a large wooden spoon. Then sift them gently. Once it is done, you can add in the carrots that have been peeled and shredded. Take a separate mixing bowl and pour in the soymilk, beaten eggs, vanilla extract.
Mix them using the electric mixer gently. First, start with slow speed for a minute and then increase to medium speed for a few minutes. Now, this mix can be poured into the earlier oat bran mix that already sifted.
Make a smooth batter out of the two mixtures. You need to ensure that there are no holes or lumps formed when mixing them to form the batter. Again you can either use your electric mixer or clean hands.
